After
bottling, there is a waiting period for the wine to acclimate to this new environment - usually about two months. Then it is ready for delivery and
consumption. With the blessing of a long growing season - usually rain
free from April to mid-October - the grapes have the luxury of extra
hang time on the vines. The higher sugar content in the grapes
produces wines that are a bit higher in alcohol, rich in forward
fruit, viscous and full-bodied.

Gafen Winery has been making wine since 1998 in the city of
Jackson in Amador County, California.
We are producing about three
hundred cases a year of Viognier, Syrah and Zinfandel. Our credo is to
let the wine reflect the soil and climate in which it is grown. We try to
stay out of the way and let each vintage develop its own unique
qualities.
While many wineries inoculate their wine with yeasts
developed in laboratories, we prefer to let the natural yeasts that
exist on each grape facilitate the fermentation process. We age the
reds for eighteen months in American and European oak and we barrel
ferment the Viognier, then age it in European oak for six months.
